Easy Peasy Buttercream Frosting!

Happy Halloween! I hope your day is filled with treats and not tricks. 2020 has provided enough of those!

So…I’ve been using the same buttercream frosting recipe since I first started getting into baking. It has not failed me yet! It’s creamy and rich…and addicting to eat. So…you know…be careful. šŸ˜‰

Since it’s Halloween I wanted to decorate the Hot Cocoa Cookies I made. Nothing better then a frosted cookie…but it’s great for cakes and other desserts too! It really holds its shape and firms up nicely. Plus…it’s just so darn delicious!

Btw, the recipe below makes enough icing for a whole cake. I halved the recipe to decorate these 16 cookies.

Easy Peasy Buttercream Frosting!

Ingredients

  • 1 Cup of Butter (2 Sticks @ Room Temp!)

  • 1 Teaspoon of Vanilla Extract

  • 1-2 Tablespoons of Half & Half (heavy cream or milk works to)

  • A Pinch of Salt

  • 4-5 Cups of Powdered Sugar

Directions

  • First things first make sure your butter is room temp.
  • Grab a stand or hand mixer. Start beating the butter to a smooth consistency. Once it’s nice & smooth, slowly, add in a cup of powdered sugar at a time. Start with 4 cups. Mix well!
  • Then add in half & half, salt, & vanilla extract.
  • If the frosting is to runny add more powdered sugar. If it’s to stiff add another tablespoon of half & half.
  • Keep mixing until it is to the consistency you like.
  • Use immediately or transfer it to a sealed container. This can last up to 2 weeks in the fridge. I recommend letting is sit at room temp for 30 minutes to an hour if you refrigerate it.
