I’m back with loads of recipes for 2021! I took a small break from posting…with the Holidays hitting and then my little family got sick. I just haven’t been up to posting.

Buttttt….I’m feeling much better and ready to get back to sharing my favorite recipes with everyone.

Since, it is a new year I thought I would share one of my favorite homemade dressings. Creamy Lemon Dressing! It’s tart. It’s sweet. It’s creamy. Annnd…it’s perfect for bitter greens like kale, spinach, & arugula. This dressing definitely delivers on flavor, I love yogurt based dressings. It’s healthy and yogurt is packed full of protein which is a bonus in my book.

I’ve been eating this salad for awhile now. It’s super filling and packed full of flavor. If I’m going to eat a salad it better be flavorful. Also, I realize it might be weird that I put a soft boiled and runny egg on top…it’s kind of my favorite salad topping…I challenge you to try it!

(Salad Components: Spinach/Arugula mix with grilled chicken, cherry tomatoes, shaved parmesan, and a soft boil egg)

This lemony dressing is a perfect compliment to bitter greens like kale, spinach, & arugula. I can’t recommend it enough. It’s nice & tart with a touch of sweetness. It’s a healthy dressing, but not lacking in flavor!

Ingredients

  • 1/3 Cup of Lemon Juice

  • 1 Tablespoon of Lemon Zest

  • 2 Cloves of Garlic

  • 1 Tablespoon of Dijon Mustard

  • 1/4 Teaspoon of Salt

  • 1/4 Teaspoon of Black Pepper

  • 1/2 Cup of Olive Oil

  • 1/2 Cup of Greek Yogurt

  • 2 Tablespoons of Honey

Directions

  • In a mixing bowl, combine the Greek yogurt, lemon juice/zest, Dijon, salt/pepper, garlic, & honey.
  • Once combined slowly whisk in the olive oil – mix well.
  • Serve immediately over salad or as a veggie dip.
  • This dressing will keep for up to 2 weeks!

    Looks amazing! Everyone needs a varity of ideas when trying to eat right. Thanks for the new egg idea on salads. We will definitely try the salad dressing also.
