Garlic Jasmine Rice

This recipe is a family favorite. I make it at LEAST once a week. Even my 1 year old loves it…well she likes throwing it at the dog…but that’s neither here nor there.

It’s such an easy side to whip together, especially, on a busy night. Also, it’s a healthy side. There is only one tablespoon of fat and then you have onions, garlic, basil, broth, & rice! You probably have all these ingredients in your pantry right this minute. One of my favorite things about cooking is finding ways to insert lots of flavor into healthy cooking. Baking is my passion, but feeding my family healthy meals is so rewarding.

Garlic Jasmine Rice

I love this recipe! What’s not to love…it has garlic…it has tender onions…it has delicious fresh basil! Seriously, the best side for dinner.

Ingredients

  • 1 Cup of Jasmine Rice

  • 2 Cups of Chicken Broth

  • 2-3 Cloves of Garlic (minced)

  • 1/2 of an Onion (diced)

  • 1 Tablespoon of Fresh Basil (1 tsp of dried)

  • 1 Tablespoon of Olive Oil

Directions

  • In a medium pot, add the olive oil. Let that heat up over medium-high heat. Then add in the diced onion & minced garlic. Sauté until tender & starting to brown. About 5-6 minutes.
  • Pour in the chicken broth & bring to a boil. Then add in the cup of rice & basil. Then lower the temp to Low & cover it.
  • Let that cook, covered, over low heat for about 15-18 minutes. Until the broth is absorbed & the rice is tender.
  • Once the rice is ready, fluff with a fork, then serve!
